Chicken Nuggets!

I thought this recipe was going to be a total flub... and it ended up being GREAT! Kevin absolutely loved these and they tasted just like McDonalds! (And since the Italian McDonalds is ridiculously expensive, this recipe is a great substitute! It's an under $5 meal!)

Chicken Nuggets


Ingredients:
1 egg
1 c water
1 c flour
2 teas salt
1 teas onion powder
1/4 teas pepper
1/8 teas garlic powder
a pinch of paprika (the original recipe called for MSG.. but of course everyone knows MSG isn't good for you and it actually doesn't have flavor it's self, it just enhances the other flavors... when dealing with chicken, paprika will do the same thing.. so I used it instead)
Oil for frying (I use peanut oil)
4 chicken breasts (i used 3 because that's how ours come packaged, and it was plenty for Kevin and I)

  • Beat egg and combine with water
  • Combine flour, salt, pepper, onion salt, garlic powder, and paprika in a gallon sized ziplock bag
  • Pound each chicken breast until 1/4 inch thick
  • Trim into bite sized pieces
  • Toss chicken with flour mixture
  • Remove chicken from flour, dip in the egg mixture and toss with the flour again
  • Throw entire bag (flour and chicken) in the freezer for at least an hour
  • Cover the remaining egg mixture and place in fridge
  • Remove from freezer, dip the chicken in the egg mixture
  • Toss chicken with flour mixture
  • Deep fry at 375 (190C for those in Europe!) for 10-12 minutes (or until golden brown)
  • Remove from deep fryer and drain on a BROWN PAPER BAG (draining on paper towels will cause them to go soggy!)

Croazia

2:15am.
After sleeping for two hours, (not by choice, i would have went to bed early if I could have!) I awoke to get ready for our trip to Croatia. I woke Kevin up as soon as I got out of the shower and Roey up 15 minutes before we had to leave. I planned on feeding her and changing her diaper and assumed she would go back to sleep. Nope.

4:10am.
We arrived on base and waited for out bus. They told us we had to be there by 4:15am, but our bus ended up running late.. so being there early was pointless.

4:55am
We departed from Aviano.. and yes, Rosalie was still WIDE awake.. giggling and talking and spitting.

About an hour and a half into our trip, we stopped at an Auto Grill (a rest stop) right before leaving Italy.


We crossed into Slovenia and were only in Slovenia for about 30 minutes before we entered Croatia... Right before we crossed into Slovenia, Roey fell asleep.. she slept the whole way through Slovenia and didn't wake up until we were at customs at Croatia.


9:15am
We arrived at our first destination, Porec, Croatia. Since our bus was running late, we had to book it to the boat because it was pulling out at 9:30.. just as we all got on the boat, it pulled out.

We made a few stops to pick up some people, then we were off! We cruised down the Adriatic sea along the Istrian Coast.. We went down the Lim Canal where we saw an old pirates cave, which by now has been turned into a tourist attraction. There are a lot of old pirates caves along the Istrian Coast, but that one was the only one visible from the boat. Roey only lasted about 20 minutes on the boat before she zonked.. She didn't wake until we docked.






11:30am.
We docked in Rovinj, Croatia. They split us up into 2 groups.. we were in the first group, so we stayed on the boat for lunch, which everyone in the second group left the boat and was to come back later for lunch. We were seated upstairs where out of like 6 tables of 8 people, there were only 2 other Americans. Mostly everyone was from Germany and Belgium. It was all Germans that sat at our table and luckily the couple across from us spoke English, so we talked to them the whole time. The husband seemed really interested in us Americans and kept asking 100 questions! Our lunch was pretty good.. we had chicken and Croatian sausage.. they also served wine with the meal, but Kevin said it was no bene so i opted out of having some wine.


12:00noon.
We finished lunch and left the boat for some sightseeing on our own. The town was gorgeous! Rosalie was so well behaved.. she just cruised around in her stroller and you wouldn't have even known she was there. Kevin and I got a picture done of the 2 of us that is a profile.. it was crazy, this Greek guy did it in probably like 4 minutes... he cut out profile views of kevin and I, and when he was done they were connected.. I'll have to post a pic later.





2:30pm.
We boarded back onto the boat. We decided to sit downstairs this time because Kevin and I were miserable burnt and we just wanted to be out of the sun for awhile. Roey was sunscreened of course so it didn't bother her. We sit in this lil private spot on the back of the boat.. it was so nice and relaxing



3:00pm.
We arrived in our next lil town where you could shop and swim. When we got off the boat Roey passed out, so Kevin and I walked around the little shops and got some gelato. We spent the rest of our time there hanging out by the sea. It was so nice and relaxing.

4:40pm.
We boarded back onto the boat and headed back for Porec. By this point, everyone was so exhausted and ready to go home. We sat in the big section of the boat downstairs and we sat with these 3 sisters.. Rosalie just loved them.

6:00pm.
We arrived back in Porec. We shopped around a lil bit.. got Rosalie a fan that has pictures of all the big Croatian cities on it.. it's cute.. and a bib with 2 ladybugs on it and it says Croatia. We always try to get her something from every place we go, but everything in Croatia was kinda junky looking, and the fan was the best we could do!


We ate lunch at a lil (and i mean LITTLE) cafe by the sea... and had a Croatian pizza (a margarita).. it was really good.. Kevin ate over half the pizza by himself!


We then headed back to the bus station where we had to pay to use a bathroom.. which is no shocker over here.. but the bathroom was sooo dingy! While we waiting for the bus, we watched a call girl do her thing and meet up with clients.. it was hilarious. As soon as she walked into the bus station, I jokingly said to Kevin "She's a prostitute".. Turned out I was right. Also while we were waiting, this guy came through digging through the trash.. he pulled out a redbull can, examined it really close, sniffed it a lil, then put it in his bag. It was FOUL.

7:30pm
We boarded the bus.. at this point, we were miserably tired.. sunburnt.. and ready to be home in our bed! Roey fell asleep before we even left Croatia. When we got to customs, they made us all get out of the bus which sucked because roey was asleep and we were finally cooling down on the bus... and it was sooo muggy outside!!! Rosalie slept the rest of the bus ride. We watched the Blindside, which I ended up zonking out before Pordenone and Kevin woke me up to tell me we were almost in Pordenone. Why? I don't know. We also HAD to stop at a rest stop an hour away from home.. for HALF AN HOUR. No one wanted to, but they made us get off the bus.

11:30pm
We arrived back to Aviano.. We could not wait to get home! We had a blast but were sooooo tired! Our ITT escort absolutely loved Rosalie.. when we got off the bus she told us we could just leave her with her! lol!

I didn't post NEARLY all the pics I took... I took 90 pics and I'm not about to sit and upload every single one on here.. especially since I have a house to clean lol... We're finally getting everything back to normal here.. we got back and I had a mountain of laundry to do, which it isn't easy getting caught up on laundry here. Maybe another day I'll post more pics.. but for now, if you don't have facebook, this will have to do! :)

Rosalie Maggie.. 8 Months Old

I still can't get over the fact that my lil peanut is already 8 months old.. Time for our monthly recap.

8 MONTHS OLD!
Weight: 21 lbs 8 oz! A TWO pound jump from last month
Height: 29 inches long
Diaper Size: Still a 3
Clothes Size: Almost into 12-18 months. Some 6-12 months are gettin too small but 12s are still a tad bit big.

Words: Dada, Mama, Hey Dad
She is quite the talker and spitter, but those are the only words coming out right now. Mostly everything is "Hey Dad!" I only get Mama when she's crying.

Teeth: Still just two! I don't think she's going to get anymore! lol! She's going to have 2 teeth the rest of her life. Haha ... in all reality, her bottom gums are starting to get a lil white so when one pops through, the rest are quickly to follow!

She's finally eating solid foods again.. but still on sleep strike.

This Saturday she'll visit her 4th country.. Croatia.

She is pulling herself up to everything now and her little legs are strong. She gets the concept to take a step to if she needs to pull herself closer to something. She's going to be walking in no time.. I wish she wouldn't though! lol! She's so curious now just crawling, wait til she starts walking!

We usually spend a couple of days out of the week in her pool... she's such a lil water baby.. she loves being in the pool!

Long Over Due Update.....

Today I feel like I got hit by a truck full of wet garbage. Rosalie still is on her sleep strike. I don't know how much more I can take.. I've done pretty good so far.. considering for the past month, we sleep at most, 2 hours a night, but last night I cracked. I don't know what was so different about it or if it was just everything catching up with me, but I think I went over the edge.. okay I've complained, now time to move on.

This weekend was INSANE. Friday, I ran errands all afternoon, picked Kevin up from work, and we went for groceries because I didn't want to go to the base on Saturday because I figured it would be a ZOO. Well one of the stops I had to make was the Post Office because Rosalie's 4th of July outfit still hadn't came.. and of course, it wasn't there on Friday... so that meant we'd have to run back to the base on Saturday anyways.

Saturday, we headed to the base to hit the PO again, and SUPRISE, Rosalie's 4th of July outfit still didn't come. Boy was I jacked!!! I paid like $35 for a tutu just for the 4th of July, and it never came. The lady claimed she shipped it like 2 weeks ago.. I'm sure she lied. So Kevin decided to get his hair cut while we were there, then we headed to Area 1, where spontaneously, we bought a patio set. I know, crazy. It's BEAUTIFUL. We ended up hanging around base for a few hours waiting for our friends to come so they could take it to our house for us.


We got home around 4, and I still had to clean my house and make everything for the 4th of July.. but I got it all done by 6:30! After Roey went to bed, Kevin and I watched Dear John. I didn't know what to think of it... I loved the book, but was disquisted by the ending and suprisingly they changed the ending in the movie.. so I don't know. I guess it wasn't as bad as everyone made it out to be!

Sunday, we had a 4th of July party here. Despite the rain, it was a blast! Our friends are pretty much the best... and Roey had fun playing with Audrey too! :) We headed to the base around 9:30 for the fireworks. The fireworks show was really good this year.. they said it was going to be a 25 minute show, but it was def longer than that.. and Rosalie LOVEEEED them! When we left for the base she was down for the night.. as soon as I walked into her room to get her she woke up. (My intentions were to take her in her PJs and just let her sleep).. well she was wide awake, stayed awake the whole way to the base, and stayed up for the fireworks. After the show, we weren't even off the base yet and she crashed!






Yesterday was a down day for us.. we just kinda chilled.. it was def nice and relaxing..

Today.. I don't see myself doing a whole lot. I have gotten laundry done and put away.. Roey's crib sheets stripped and washed.. her high chair stripped and washed.. and her baby book updated.. that'll probably be the extent of what I'll do!

It's almost Ro's nap time, so I'll do a Roey update this afternoon :)

can you believe...

8 months ago my precious baby girl was born! I can't believe it! Time is going so fast.. she's getting so big and doing so much.. only 4 months til her first birthday.

Don't really have time to do an update now.. friends will be here in a little over and hour for our 4th of July festivities! Spending 4th of July with the men who fight for your freedom and with some of the strongest, most courageous women you'll ever meet. We're having a lil shindig here.. then all of us are heading to the base this evening for fireworks! Can't wait to just hang out with my girls and Roey can't wait for her friend Audrey to come over! (Derek's already selling tickets for a cage fight! hahahaha! Those 2 girls are just too cute together.)

I'll update tomorrow! Still have stuff to do before everyone gets here!

Week Three Weigh in

So Today was the end of my 3rd week.. I knew that I didn't do good on my diet.. I haven't been drinking much water, and I've been eating big supers.. so I knew that I gained this week.. and of course I did.. but only 0.9lbs.. guess it'll just give me more to work for next week!

WEEK ZERO: --
WEEK ONE: -2.9lbs
WEEK TWO: -1.3lbs
WEEK THREE: +0.9

I'm so close to my goal :(

Chicken Quesadillas and Mexican Style Cornbread

We aren't big Mexican eaters in our house.. sure we like the occasional tacos or plain fajitas, but that is about the extent of it.. so making this meal was pretty risky, but we both loved it! I did change a few things from the original recipes to modify to our liking, and it was just perfect! So here's the recipes!!


Chicken Quesadillas

Ingredients:
1 lb skinless, boneless chicken breasts cut into strips
1 tbls canola oil
flour tortillas
2 c mont. jack cheese
Sour cream
Salsa

  • Preheat oven to 350 (175C for us in Europe!)
  • Grease cookie sheet
  • Fry chicken strips in oil until no longer pink
  • Place tortillas between 2 damp paper towel and microwave for 1 minute
  • Fill half of 1 tortilla with chicken and cheese
  • Fold tortilla over
  • Repeat
  • Bake quesadillas in oven until cheese has melted
  • Cut into 4s
  • Serve with salsa and sour cream
Mexican Style Cornbread

Ingredients:
1 c yellow cornmeal
1 c sifted all purpose flour
2 1/2 tbls sugar
4 teas baking powder
1/2 teas salt
1 large egg
1 c buttermilk
1/2c sourcream
1/4 c vegetable oil
Handful of cheese (I used Shredded Mild Cheddar! PERFECT!)
2 tbls of honey

  • Preheat oven to 425
  • Grease an 8" pan
  • Combine cornmeal, flour, sugar, baking powder, and salt
  • Then add egg, milk, sourcream, oil, honey, and cheese
  • Mix until smooth
  • Pour into pan
  • Bake 20-25 minutes or until golden brown (mine cooked for about 25-26 minutes)

I finished the meal off with Spanish Rice.. just a regular store bought bag of spanish rice.. all 3 foods complimented each other greatly!!!
